RESUMO:

Monoacylglycerols (MAG) are widely used in the pharmaceutical and food industries. Its production can be obtained from glycerolysis reactions, partial hydrolysis of oil or fat, and esterification of glycerol with free fatty acid catalyzed by acid, base, or enzymes. This study aimed to develop an efficient glycerolysis system for the chemical production of MAGs containing polyunsaturated fatty acids from buriti oil (OB, Mauritia flexuosa) at low temperatures and without solvent. The synthesis parameters used were glycerol: OB ratio of 3:1 (m:m), 0.05% LiOH about the mass of OB, a temperature of 70 °C, and constant magnetic stirring. FTIR and Raman spectroscopies confirmed the MAG production. Thermal analysis tests showed that the synthesis temperature did not modify the structure of the triacylglycerol (TAG), as the degradation of the material begins at temperatures close to 150 ºC. It was verified by UV/VIS absorption spectroscopy analysis that the presence of bioactive compounds (like carotenoids and tocopherols) is in a smaller proportion when compared to TAG. The presence of these components corroborates the justification for the high oxidative stability of MAG based on the Rancimat test. Some biological tests analyzed suggest the in vivo application of MAG, includingthe absence of lethality in the Artemia saline test, and the cell viability assay based on tetrazolium salt (MTT), which did not show cytotoxic potential for the cells. Therefore, we consider that the proposed system is sustainable for producing MAG
